ooh that looks even yummier! chocolate is my fave!i just looked the cake picture i posted, it was off a website called Laura's cakes or something like that so there was no recipie. i will dig out mine, off the top of my head....i made 3 normal/basic sponge cakes with cocoa powder in sandwich tins the recipie said to slice one deep one into 3 but i am definately not that talented, sliced strawberries on each layer and it said to whisk double cream but i always cheat and use extra thick double cream which is soo thick and heavy, perfect i do always add a little bit of icing sugar purely to sweeten it but only a little. then it is really as simple as it looks, layer it up and cover it with cream as well (at this point you will understand why i buy extra thick cream and not beat it myself) occasioally i have crushed up merange nests (don't know the spelling, how awful) and mixed it in the last bit of cream that goes on the top. personally i don't have that sweet of a tooth, (believe it or not) so i hardly ever use butter icing unless it is for someone else i generally use cream or cream cheese with icing sugar. BBC good food is the best place for cakes and bakes i get a lot of my ideas from there and adapt them for what need/want/crave!!!!!

Pineapple Cake
10oz Margarine (Stork)
8 oz Sugar (normal white)
14 oz Self raising flour
4 eggs
1 large tin of crushed pineapple (drained) can normally only be found in morrissons or sainsbury's, or blend up your own
1 large tin of pineapple chunks (drained)
4 oz Glazed cherries (halved, I use the whole tub otherwise it's a waste)
Cream the margarine with the sugar
Add the beaten eggs with few spoonfuls of flour (if it looks like its curdling add more flour)
stir
Add the cherries and pineapple
stir
then add the rest of the flour.
Fill 2 loaf tins already greased
Bale at 160 oc for 45- 60 Min's
Hope this makes some sort of sense. The recipe has been passed on to me so all the fancy words have been taken out.
