They send these letters a) as reminders in case you have genuinely forgotten and b) as a means of bluffing you into sending them money when you have changed your mind. If you never established the direct debit, you do not have a contract with them. If you do not intend to stay with them, then set up a new insurance, then write and cancel with them. If, in the mean time, you have to make a claim then send them their money because their letter makes it clear that they have been assuming liability ... Either way you are fine.
